Other than eating them fresh, does anyone have any tips about using fresh pistachios (instead of the older variety)?
ohhhhh....we bought a bag yesterday at the Vic market too!!
We are absolute Pistachio fans, and couldn't pass the short lived opportunity
I have never used fresh Pistachio's before either. One obvious idea that came to mind first was Pistachio Ice-cream...

Guess what, yesterday I just happened to make some White chocolate & Pistachio biscuits which were incredible, the recipe has been posted.

I was going to say 'I'm a little clueless, but is it a pistacio nut?' I'm feeling a little smug about my foodie skillz now, hee!
Oh, lucky you, fresh pistachios are beautiful - but warning, they don't last long. I bought a huuuuuuuuuuuuuge bag about three years ago, ate a third fresh from the pod, used another chunk in a Moroccan-ish rice pilaf and then three days later had to throw the rest out as they'd turned into furry little monsters (despite being kept in the fridge). I hated the waste.
