I love eggs simmered in a spicy tomato sauce - I use a Greg Malouf recipe for meatballs, but... leave out the meatballs!
The eggs fried in the cut-out of a slice of bread was my dad's specialty. He called them Pharoah's Eyes, which was a bit of a hurdle to get over, but they were worth it!

Fried bread is a wicked treat, only marginally redeemed by ripping out a hole in the middle and filling it with a fresh home-laid egg - cooked runny, of course!
Injera - pure genius, meatballs without the meatballs :) Though Pharoah's Eyes is kinda creepy.
Amanda - the cut out disc of bread, all fried and cripy is the perfect dipper in the runny yolk.
Poached, on whole wheat toast and sprinkled with dukka. Discovered the 'dukka' idea at the Social Roasting Company - Racecourse Road, Flemington and now make it at home every Sunday.
Poached, baked, sunnyside up. And best of all, fried runny egg cantonese style.
Penny - enlighten me, what are Cantonese style eggs?
Kath - nothing like a little dukkah! Have you ever tried Zaatar on eggs? I sprinkle some on the top of baked eggs when I cook them.
